I’m super excited about this smoothie! It is SO refreshing, SO tasty, SO chocolatey, and SO healthy…yup, you read the last part right – this is chocolatey and SUPER healthy! Believe it or not, it’s got two types of hidden veggies in there (cauliflower and spinach), which we all know have numerous health benefits, but today, I am even more excited about the ingredients that make this smoothie so chocolatey and minty fresh: raw cacao and mint leaves.
Both of these ingredients provide so many health benefits, which is fantastic, because they go together so well! Let’s take a look!
Wow! All that in two delicious ingredients! Are you starting to see why I’m so excited to share this smoothie recipe with you? Oh, and guess what? This recipe is sweetened with stevia, so it is sugar free – it doesn’t even have any fruit, so it is really low even in natural sugars. Seriously, I can’t say enough good stuff about this thing!
MINT CHOCOLATE SMOOTHIE
Ingredients (makes 1-3 servings depending on size)
- 1/3 cup raw cashews
- 3 Tbsp. fresh mint leaves
- 1.5 Tbsp. raw cacao powder
- 1.5 Tbsp. raw cacao nibs – divided
- 1 large handful baby spinach
- 2-3 cups frozen cauliflower
- 1 tsp. alcohol free vanilla
- Stevia, to taste
- 2-3 cups almond milk, depending on how thick/thin you want it to be
Put all the ingredients in a blender (start with just 2 cups of almond milk or even a little less if you’re looking for a really thick shake like consistency), except the stevia, and leave a little bit of cacao nibs out if you want to use them for garnish. Blend on high until smooth. Add in the stevia and more almond milk, blending each time, until you have the desired taste and consistency.
Transfer to cups, and garnish with raw cacao nibs.

This is an extremely healthy smoothie that tastes like an extremely unhealthy cake in a glass! No kidding! I saw the following pin for a recipe for Apple Carrot Cupcakes.
That sounded delicious, but of course, the recipe called for sugar and glutenous flour, etc. So, I decided to make a smoothie inspired by this recipe. The result? AMAZING! Gluten free, veggies, fruit, power foods all in a glass of delish! Believe me when I say you need this smoothie in your life!
CARROT APPLE CAKE SMOOTHIE
- 1 cup baby carrots
- 3/4 cups almond milk
- 1/2 honey crisp apple, cored
- 1/2 frozen banana
- 1/4 cup plain greek yogurt
- 1/4 cup gluten free oats
- 1 Tbsp. chia seeds
- pinch of cinnamon
- pinch of stevia, or a bit of honey (optional)
- small handful of walnuts (optional)
Place all the ingredients in a blender and blend until smooth!
Now you can have your cake and drink it too! 🙂 Enjoy! 🙂
I saw the following pin on Pinterest for a Banana Strawberry Smoothie.
It links to a recipe for a banana strawberry smoothie, which made me really crave one! I changed the recipe to use a pinch of stevia as a sweetener instead of honey, and I used plain greek yogurt instead of milk. Lastly, I added spinach, celery, and ginger (as you all know by now, I ALWAYS add veggies when I can)…so I guess, I changed it completely, but it does still contain strawberries and bananas! 🙂
It’s SO yummy, and will make you feel like you are laying by the pool on a beautiful summer day, indulging in a sweet shake-like treat that you should feel guilty about having. When in reality, while you may be near a pool depending on where you are in the world and this does taste sweet, you are actually taking in something that is SO good for you body, that you don’t need to feel the least bit guilty about slurping it down to the last drop!
STRAWBERRY BANANA SPINACH SMOOTHIE
- 1 cup frozen strawberries
- 1 frozen banana
- 1 HUGE handful of spinach
- 1 large stalk of celery
- 1 small chunk of ginger
- 1/2 cup plain greek yogurt
- 1/2 cup water
- 7 ice cubes
- pinch of stevia (optional)
Place all ingredients in a blender and blend till smooth. Transfer to a cup and drink.
