Brussels Sprouts and Cranberry Side Salad


This lil’ side salad just screams fall!  It makes for a perfect side to baked chicken breast or turkey, or you could just chop up some chicken or turkey and add it right in to make it a meal salad instead of a side salad.  However you choose to enjoy it, enjoy it you will!!!

Brussels sprouts are one of the healthiest foods you can put in your body.  They are loaded with nutrition and provide many many health benefits, some of which are listed in the following pin.


If you are looking for a way to include more of these little guys in your diet, this salad makes for the perfect way to do so!


Ingredients (makes two servings)

  • 1 lb. brussels sprouts, washed and quartered
  • 1/2 red onion, chopped
  • 1 Tbsp. olive oil
  • 1/4 tsp. garlic granules
  • pinch of stevia
  • 2-3 Tbsp. apple cider vinegar
  • sea salt
  • 2 oz. soft goat cheese
  • 1/3 cup dried cranberries (apple juice sweetened)


1.) Heat the olive oil over medium heat in a large frying pan.  Add the onion and brussels sprouts.  Cook for 2-3 minutes.  Add the garlic granules, stevia, apple cider vinegar, and sprinkle with sea salt.  Cook for 10 minutes, stirring occasionally.


2.) Transfer to a plate or bowl.  Top with crumbled goat cheese and the dried cranberries.  Season with more sea salt, if desired.

It’s Thanksgiving!!!  What a great holiday!  No, not because we stuff ourselves full of delicious food (though that is certainly a bonus), but because it gives us a chance to slow down and really concentrate on all the things we have to be thankful for in our lives.  Did you know that being thankful is actually good for our health and studies have shown that being thankful and showing gratitude can increase our happiness immensely!

Every morning when I wake up and every evening before I go to bed, I always list off 5 things that I am thankful for – this is not a hard thing to do as there is ALWAYS something to be thankful for if we just decide to be people who continually give up thanks!  Of course, there’s the big things: family, friends, pets, health, a roof over your head, etc.  But even beyond that, there are so many little things that many take for granted.  What about the feeling of a nice hot shower in the morning to wake you up or the coziness of waking up on a rainy day, getting a whiff of your favorite smell, clean clothes or blankets just out of the dryer, an endless sky, a smile from a stranger, a random act of kindness…I could go on and on, and I repeat, there is ALWAYS something to be thankful for!

Of everything that I am thankful for (and there’s A LOT!), I am most thankful for Papa’s love, grace, and mercy.  He is the Provider of all the things that I am thankful for!  Without Him, I have and am nothing – He is everything.  So, on this day of thanks, I am going to share 10 of my favorite bible verses about being thankful and giving thanks.  Grab a blanket and a cup of hot cocoa (and be thankful for both of those things), sit back, relax, and enjoy some snippets of His word!  Be blessed!


1.) Psalm 107:1 ~ Give thanks to the Lord, for He is good; His love endures forever.

2.) Colossians 3:15-17 ~ Let the peace of Christ rule in your hearts, since as members of one body you were called to peace.  And be thankful.  Let the word of Christ dwell in you richly as you teach and admonish one another with all wisdom, and as you sing psalms, hymns and spiritual songs with gratitude in your hearts to God.  And whatever you do, whether in word or deed, do it all in the name of the Lord Jesus, giving thanks to God the Father through Him.

3.) Psalm 30:12 ~ that my heart may sing to You and not be silent.  O Lord my God, I will give you thanks forever.

4.) Isaiah 12:4-5 ~ In that day you will say: Give thanks to the Lord, call on His name; make known among the nations what He has done, and proclaim that His name is exalted.  Sing to the Lord, for He has done glorious things; let this be known to all the world.

5.) Philemon 1:4-7 ~ I always thank my God as I remember you in my prayers, because I hear about your faith in the Lord Jesus and your love for all the saints.  I pray that you may be active in sharing your faith, so that you will have a full understanding of every good thing we have in Christ.  Your love has given me great joy and encouragement, because you, brother, have refreshed the hearts of the saints.

6.) Ephesians 2:8 ~ For it is by grace you have been saved, through faith – and this is not from yourselves, it is the gift of God.

7.) John 3:16 ~ For God so loved the world that He gave His one and only Son, that whoever believes in Him shall not perish but have eternal life.

8.) Romans 10:13 ~ For “everyone who calls on the name of the Lord will be saved.”

9.) Colossians 2:7 ~ rooted and built up in Him, strengthened in the faith as you were taught, and overflowing with thankfulness.

10.) 1 Chronicles 23:30 ~ They were also to stand every morning to thank and price the Lord.  They were to do the same in the evening.
