Dairy-Free Vanilla Cinnamon Ice Cream

Guys!!! I finally bit the bullet and got an ice cream maker, and seriously, it is the best thing ever! I have a few recipes for ice cream that don’t require an ice cream maker, such as my easy and healthy homemade ice cream recipe, and they’re great! But I am so excited to be able to get even more creative with my ice cream recipes now!

This vanilla cinnamon ice cream is absolutely delicious! Best part is that it’s good for you due to the ingredients all having some great health benefits! It’s made with only 4 ingredients; coconut milk, vanilla, cinnamon, and raw honey, and check out the health benefits of these guys!

What?!? So eating this ice cream provides all of these awesome health benefits?!? Yup!

Not only is it good for you, but it is DELISH! Super creamy and sweet! It also makes for a great base ice cream that you can turn into other types of ice cream by adding things like pumpkin, nuts or seeds, chcocolate chips, etc. Full disclosure, I made a “normal” batch with the recipe below, and then I also made another batch of boozy ice cream, in which I added some Black Walnut Creme Liquor…holy crap, it was ridiculous how yummy it was. My husband and I scarfed it down pretty quickly, and I plan to make some more for this weekend when we are having some friends over for dinner!

Like I said, I used an ice cream maker for this recipe, which makes things super simple. You could also mix all the ingredients together, and then put it in the freezer to freeze it, but you won’t get the nice ice cream texture you would get from an ice cream maker.

DAIRY-FREE VANILLA CINNAMON ICE CREAM

Ingredients:

  • 2 14-oz. cans of full fat coconut milk
  • 1/3 cup raw honey
  • 1/2 – 1 tsp. ground cinnamon
  • 2 Tablespoons vanilla – you will want to use the kind with the alcohol in it to keep it from freezing to hard in the freezer.

Directions:

1.) In a large mixing bowl, combine all of the ingredients, and stir until completely smooth, and there are no lumps of honey or coconut milk (coconut milk hardens when it is cold, so you don’t want there to be clumps in there).

2.) Use an ice cream maker according to its instructions to work its magic and turn the mixture into delicious ice cream!

3.) Transfer to bowls to serve, or transfer to a freezer safe container, and place in the freezer until you are ready to indulge (it will keep for a week or two in the freezer).

Greek Yogurt Peach Sherbert

This tangy little treat makes for an incredible dessert!  The best part is that it is 100% good for you!  It’s light, cool, and tasty, and I can promise you that this will be a staple in our freezer this summer!  Another plus about this sherbet is that is is incredibly easy to make!  I chose to make peach sherbet, but you can use any fruit flavor you would like.  Peaches are so delicious, though, ya know?  Plus, they are good for you!  Check out this pin on the health benefits of peaches.

Yeah, all those benefits in a dessert?!?  AWESOME!  Okay, so let’s get to the recipe.

GREEK YOGURT PEACH SHERBERT

Ingredients

  • 2 – 10oz. packages of frozen peaches (you can substitute any frozen fruit you want here)
  • 1 cup plain greek frozen yogurt
  • 1 1/2 Tbsp. lemon juice
  • Stevia, to taste – I used stevia, but you could also use honey as a sweetener, in which case, you would want to use about 4 Tbsp. of honey in this recipe.

Directions

1.) Wash your frozen peaches, then add them to a food processor.  Process on high for 1-2 minutes.  Add the yogurt, lemon juice, and stevia.  Process on high until completely smooth.  If you prefer to have chunks of peaches in your sherbet, process just until blended.

2.) Transfer the sherbet to an air tight container and freeze in the freezer for 2-3 hours minimum.

3.) Spoon into a bowl and serve.  If you let it freeze solid, let it sit out for about 5-10 minutes to soften just a bit before spooning out.

EASY AND HEALTHY HOMEMADE ICE CREAM – DELICIOUS!

Ice cream for breakfast?  If it’s this stuff, then by all means, indulge!  I’ve seen tons of different homemade ice cream recipes on Pinterest.  Pretty much all of them are either really involved and not easy or are not good for you at all.  I was reminded of this when I was browsing through my Pinterest homepage, and came across this pin.

All of these looked SO good, but again, they called for your own ice cream maker!  However, after seeing this pin, I had a huge craving for ice cream that I knew wasn’t going to go away, so I whipped up a batch of my strawberry banana ice cream.  This is just as creamy and delicious as the real deal, but without all the sugar, and it’s also dairy and gluten free!  As another added bonus, it’s EASY to make – no fancy machine required (well, as long as you don’t consider a food processor or blender fancy)!

HEALTHY HOMEMADE STRAWBERRY BANANA ICE CREAM

Ingredients: Makes about 6 cups

  • 6 bananas
  • 1 1/2 cups frozen strawberries
  • 5 Tbsp. of the creme that’s on the top of a can of unsweetened coconut milk (make sure your can is BPA free)
  • 1 1/2 tsp. alcohol free vanilla
  • small pinch of stevia (optional) – I didn’t use any, but it depends on how sweet you like your ice cream.

Directions:

1.) Peel your bananas and cut into slices.  Place the slices on a plate and stick the plate in the freezer for 2 hours minimum.

2.)  After bananas are frozen, place the bananas and the frozen strawberries in a food processor (if you don’t have a food processor, you can use a blender).  Process on high till mixed well and becoming smooth.

3.) Add the coconut creme, vanilla, and stevia.

4.) Blend till smooth.

5.) Transfer mixture to a container with a lid and freeze for a minimum of 3 hours.

6.) Once frozen, scoop into a bowl and serve.

As you can see from the ingredients, you could totally indulge with this stuff and feel good about doing so!  The bananas along with the coconut creme makes this SO creamy and yummy!  All the enjoyment of eating ice cream without any of the guilt!  Enjoy! 🙂
