Superfood Breakfast Oatmeal

Okay, get ready for one of the yummiest and healthiest breakfast options EVER!  Every single ingredient in this oatmeal is classified as a superfood, and on top of that this specific combination that I came up with goes together perfectly!

Because of all of the super foods in this bowl, it has all of the following health and nutrition benefits:

  • Loaded with antioxidants
  • High in fiber
  • Heart-healthy
  • Plenty of protien
  • Good for healthy cholesterol levels
  • Aids in healthy brain function
  • Good for digestion
  • Healthy dose of zinc
  • Great for vision
  • Aids in detoxification
  • Anti-inflammatory
  • Immune boosting
  • Good for the skin

This is just to name a few!  The list can go on and on from here because of the plethora of amazing goodies in this food!

As with most oatmeal recipes, this is extremely easy to throw together, so it’s perfect for someone, like myself, that doesn’t want to have to do too much thinking early in the morning before they’ve had their breakfast! Let’s get to it!

SUPERFOOD BREAKFAST OATMEAL

Ingredients (makes 2 servings):

  • 1/2 cup water
  • 1/2 cup almond milk plus more for topping
  • 2-3 large carrots, shredded
  • 1/2 cup gluten-free rolled oats
  • 3 Tbsp. almond butter
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • stevia or raw honey to taste
  • 1 tsp. vanilla
  • 1 Tbsp. chia seeds
  • 2 Tbsp. shredded coconut
  • 1/4 cup pumpkin seeds (I used roasted and salted (with sea salt) pumpkin seeds)
  • 1-2 cups fresh blueberries

Directions:

1.) Heat 1/2 cup water and 1/2 cup almond milk in a medium sauce pan over medium high heat until it begins to boil. Add in the oats and the carrots. Allow to continue to boil until a lot of the liquid has cooked off (about 5 minutes or so).

2.) Remove from the heat and add the almond butter, cinnamon, nutmeg, stevia (or honey), vanilla, chia seeds, and coconut. Stir to combine completely. Fold in the blueberries and pumpkin seeds.

3.) Transfer to a bowl and top with almond milk to serve.

Healthy Veggie and Egg Stir Fry

This stuff makes the BEST breakfast ever!!!  It is so yummy and has an enormous amount of vitamins and minerals.  Of course, as I’ve mentioned (or gone on and on about) before, the eggs in this are fantastic for you.

Not only do the eggs in this provide all these great things, but it also gives this dish a great punch of protein to keep you satisfied right up until lunchtime!  The veggies in this provide even more nutrition!

Whoa, baby!  I don’t even think it’s possible to cram in any more nutrition!  See why this would make such a great start to your day?  This is my go to breakfast right now!  Also, it’s really easy to make, and that’s always a HUGE plus!

HEALTHY VEGGIE AND EGG STIR FRY

Ingredients: makes 2 servings

  • 1 cup chopped carrots
  • 1 cup shredded turnip
  • 1 cup chopped red onion
  • 2-3 cups chopped arugula
  • 1 Tbsp. olive oil or coconut oil
  • 2 eggs
  • 2 egg whites
  • 1/4 tsp. garlic granules
  • sea salt, to taste
  • Plain greek yogurt, for topping (optional)

Directions

1.) Prepare all of your veggies.

2.) Heat the oil in a large frying pan over medium/high heat.  Add the onion and carrots, and cook for about 8 minutes, stirring often.

3.) While the carrots and onion are cooking, place the eggs and egg whites in a small bowl, and whisk till frothy.  Set aside.

4.) Add the shredded turnip to the frying pan, and cook for an additional 2-3 minutes.

5.) Add the arugula, whisked eggs, garlic granules, and sea salt.  Stir to combine.  Cook until the arugula is wilted, and the egg is cooked.

6.) Transfer to plates, and top with a dollop of plain greek yogurt, if desired, to serve.

Sweet Potato Oatmeal

Alright, my favorite vegetable of the moment is SWEET POTATOES!  I am falling more and more in love with these guys!  Want a salty snack?  Whip up some sweet potato fries or sweet potato chips!  Want something sweet?  MAKE THIS OATMEAL!  There’s just so much you can do with this scrumptious veggie, so it is quickly becoming my favorite of the moment!  Not only is it super versatile in terms of what it lends itself to, it’s also ridiculously good for you!

Seriously, you can’t go wrong with these yummy yams!  Alright, so let’s get to this oatmeal!  As everyone knows who has even visited my blog once, I am obsessed with cramming as many veggies into meals as humanly possible!!!  My newest way to sneak some veggies into a dish that you wouldn’t normally think about adding veggies to is this sweet potato oatmeal!  Oh my gosh, it is so good, and of course super good of you too!  It makes for an awesomely filling breakfast that is an absolute treat to start your day with!  Are you sold yet?  Trust me, you gotta try this stuff!

SWEET POTATO OATMEAL

Ingredients

  • 1 small/medium sweet potato
  • 1/2 cup gluten free oats
  • 1/2 cup water
  • 1/2 – 3/4 cup plain almond milk
  • 1 tsp. raw honey
  • 1/2 tsp. cinnamon
  • A dash of nutmeg
  • 1 tsp. chia seeds
  • raisins and chopped pecans for topping

Directions

1.) Preheat the oven to 400 degrees.  Line a baking sheet with parchment paper.  Peel your sweet potato and cut into small pieces.  Place on the baking sheet and bake in the oven at 400 degrees for 30-35 minutes until tender.

2.) When the potatoes have about 10-15 minutes left to bake, put your oatmeal and water in a sauce pan and simmer over low/medium heat for 5-10 minutes until the water is absorbed in the oats.  Remove from heat and add the chia seeds, cinnamon, nutmeg, and honey.

3.) When the sweet potatoes are done baking, place them in a bowl and mash them up with a fork.

4.) Add the sweet potatoes to the oatmeal and stir to combine all the ingredients.

5.) Transfer to a bowl and pour the almond milk over the oatmeal mixture.  Top with pecans and raisins, if desired.
