Refreshing Cucumber Salad


Oh man, this cucumber salad is perfect for a light mid afternoon snack!  It’s super healthy and delicious, so it really hits the spot, but it’s also really light and cleansing, so you feel great after eating it!  With cucumber as it’s main ingredient, you know it’s going to feel good on the belly!  cucumbers have so many great health benefits as the following pin displays!

This salad also contains fresh dill – YUM!  I love fresh dill, and believe it or not, it also contains plenty of health benefits!


All these fantastic things in a super yummy and refreshing snack!  Now can you see why I’m raving about such a simple salad?  It’s so easy to throw together too!


Ingredients – makes one serving

  • 1 cucumber, cut into slices and halved
  • 2 Tbsp. chopped red onion
  • 3 Tbsp. plain greek yogurt
  • 2-3 tsp. lemon juice
  • 1 tablespoon chopped fresh dill
  • dash of garlic granules
  • sea salt and pepper, to taste


Place all of the ingredients in a bowl and stir together.  Season with sea salt and pepper, to taste.

As I mentioned in my last post, the week after Halloween is all about cleansing meals, so today’s lunch was no different!  I saw this pin on Pinterest for a sour cream and dill cucumber salad:


It reminded me of how great cucumbers are for cleansing the body!  In general, cucumbers are about 95% water, and all that water acts as a broom in your body, sweeping waste and toxins out of your system.  Aiding in cleansing the system is not the only health benefit of cucumbers.  Some other include the following.

  • relieves heartburn
  • great for your skin
  • aids in weight loss
  • good for the eyes
  • reduces risk of several cancers
  • stabilizes blood pressure
  • helps digestion
  • good for the kidneys and gall bladder
  • reduces cholesterol

I decided to throw together a cucumber salad despite it being more of a summer dish.  It was light and delicious, just the way I wanted it to turn out.  Not only that, but it only contains 3 main ingredients (not including the dressing), and every single ingredient (including the dressing) aids in cleansing your system and providing essential nutrients.


Ingredients: amounts depend on how many you are serving.  Use as much or as little of each ingredient as you would like.


For the salad:

  • Tomato
  • Red onion
  • English cucumber

For the dressing:

  • olive oil
  • apple cider vinegar
  • fresh or dried oregano
  • pinch of sea salt


1.) Chop your vegetables, set aside.


2.) Add all the ingredients for the dressing to a small bowl and whisk together.


3.) Combine the veggies and the dressing in a bowl and serve.
