Chicken and Broccoli

Oh my goodness, this chicken and broccoli dish is SO yummy!  This is one of my hubby’s favorites that I make!  With broccoli and chicken being its main ingredients, it’s super healthy for you, and it’s really easy to make even though it tastes like you slaved away for hours making it (don’t worry, it will be our little secret!).

The sauce for this dish is made from ginger, garlic, arrowroot, and coconut aminos.  Coconut aminos tastes exactly like soy sauce, but it is somewhat healthier for you.

  • Coconut aminos are soy-free, so if you have a soy sensitivity, this is an excellent alternative
  • Coconut aminos are non-GMO certified, whereas some soy sauces contain GMOs
  • Soy is subject to cross-contamination of gluten.  There is no possibility of this with coconut aminos, so if you’re gluten free, this should be your go to replacement for soy sauce
  • Coconut aminos have approximately 73% less sodium than soy sauce
  • Soy sauce contains phytoestrogens which can lead to estrogen dominance in women causing various diseases.  Coconut aminos contains no phytoestrogens, so it is safe for women, men, and children
  • Soy is high in goitrogens, which are thyroid inhibitors that inhibit the thyroid from utilizing iodine properly.  Coconut aminos are free of goitrogens

Of course, if you buy 100% organic, non-GMO soy sauce, you avoid a lot of the bads that can be in soy sauce, but with coconut aminos, you don’t have to worry about it at all.  Not only that, but coconut aminos seriously taste amazing!

Okay, now that we’re up to speed about coconut aminos, let’s get to this recipe!

CHICKEN AND BROCCOLI

Ingredients (make 4-6 servings)

Sauce:

  • 1 cup coconut aminos
  • 5 garlic cloves, minced
  • 2 tsp. fresh ginger, minced
  • 1 tsp. sardine juice (water from a sardine tin)
  • 1 Tbsp. arrowroot powder

Chicken and Broccoli

  • 1 Tbsp. coconut oil
  • 3/4 red onion, chopped
  • 1.5 lbs. boneless and skinless chicken breast, cut into bite size pieces
  • 5-6 cups of broccoli florets
  • 1/4 cup water
  • 3 green onions, sliced (dark green parts discarded)
  • sea salt and pepper, to taste

Directions

1.) In a small bowl, mix together the coconut aminos, garlic cloves, ginger, and sardine juice.  Set aside while you cook the chicken and broccoli.

2.) In a large frying pan, heat the coconut oil over medium heat.  Add the onion, and sauté until soft.  Add in the chicken and cook until the chicken is completely cooked through and a bit browned.  Transfer the onion and chicken mixture to a bowl.

3.) Place the same pan you just emptied the chicken and onion out of back over medium heat, and add the broccoli and 1/4 cup of water to the pan.  Cover and steam for 3-4 minutes, then remove the cover and let the water cook off.  Transfer the broccoli to the same bowl the onion and chicken is in.

4.) Place the same pan back over medium-low heat.  Add the prepared sauce to the pan and slowly heat the sauce.  Very slowly, add in the arrowroot powder, and stir.  The sauce will thicken up considerably.

5.) Add the broccoli, chicken, and onion mixture back to the pan, and stir to coat with the sauce.

6.) Transfer to bowls or plates.  Season with sea salt and pepper, to taste.  Top with the green onions and serve.

Blueberry Banana Ginger Smoothie

Of all the berries in all the world, I think blueberry might be my favorite!  Why, you ask?  Well, blueberries are a power fruit packed with antioxidants!  There are a number of different ways that blueberries are beneficial to our health!  The following pin explains some of the health benefits of blueberries, and if you follow the link, you can see even more health benefits of these little morsels!

So we have all these awesome health benefits, and on top of all that, they taste amazing!  I love freezing a big batch of blueberries and just having them as a snack to munch on!  This smoothie recipe has blueberries as it’s main ingredient, but there are also some other powerhouses in there such as chia seeds, ginger, and banana!  At any rate, the smoothie is delicious and with it packed with nutrients like it is, it is the perfect way to start out the day!

BLUEBERRY BANANA GINGER SMOOTHIE

Ingredients

  • 1 banana
  • 1 cup frozen blueberries
  • 1/2 – 1 cup almond milk
  • 1/3 cup plain greek yogurt
  • 1 Tbsp. chia seeds
  • 1 small chunk of ginger (about 1/2 inch cube)
  • pinch of stevia (optional)

Directions

1.) Put all the ingredients in a blender and blend till smooth.

Anti-Bloat Smoothie

It’s that time of year!  New Year’s day has passed, and we’ve all been there, when we feel like we’ve overindulged over the holidays, meaning we feel pudgy and bloated.  YUCK!  Well, I’ve got great news!  This smoothie doesn’t just taste awesome, it is also perfect for beating the bloat!  All of the ingredients in this gem of nutrition have anti-bloating properties!  From bananas helping to reduce bloat caused by consuming too much salt to celery, which acts as a natural diuretic.

  • Bananas: help to reduce bloating caused by too much salt intake.
  • Celery: acts as a natural diuretic.
  • Mixed leafy greens: loaded with fiber and helps ease water retention
  • Almond Milk: Adds a punch of protein helping to fill you up and keep you from overeating.
  • Plain greek yogurt: filled with good bacteria that aids in digestion and moves things through more smoothly.
  • Cucumbers: Hydrating and acts as a natural diuretic.
  • Ginger: The creme de la creme of solving gastrointestinal duress.

Of course, another plus is that this is a smoothie, which makes it SO easy to make.  It’s basically just a matter of throwing everything in a blender and pushing blend! 🙂

ANTI-BLOAT SMOOTHIE

Ingredients:

  • 1 handful spinach
  • 1 stalk celery
  • 1/2 cucumber
  • 1 frozen banana
  • 1 small chunk ginger
  • 1/3 cup greek plain yogurt
  • 3/4 cup almond milk
  • 7-8 ice cubes (optional)

Directions

1.) Place all the ingredients into a blender and blend on high until smooth.

Blueberry Smoothie With Hidden Veggies

Well, I’ve found a new favorite!  Wow, this smoothie is SO SO YUMMY!!!  The best part?  It’s got veggies in there that are so good for you, but totally tastes like a fruit-only smoothie!  Yum.  That is all.

The main ingredients in this smoothie are blueberries, banana, red cabbage, and carrots.  Know what that means?  It means you are getting slammed with loads of antioxidants when you drink this thing!  On top of that, there are tons of other great health benefits that each of these ingredients provides.  Take a look at the following pins explaining some of these awesome benefits!

BLUEBERRY SMOOTHIE WITH HIDDEN VEGGIES

Ingredients

  • 1 cup almond milk
  • 1 cup frozen blueberries
  • 1 frozen banana
  • 1 cup chopped red cabbage
  • 1/2-3/4 cup baby carrots
  • 1/3 cup plain greek yogurt (optional, but it makes it super creamy – yum!)
  • small chunk of ginger
  • stevia, to taste (optional)

Directions

Put all the ingredients in a blender and blend until smooth.

SUPER HEALTHY CLEANSING SMOOTHIE

Continuing on with our cleansing for the week after Halloween!  This smoothie that I made as a snack today is SO good for you, but it is so yummy that you would never know it!  It’s quite simple, but contains quite a few super foods making it a nutritional powerhouse.  You will feel great after drinking this!  Some of the ingredients along with their benefits are as follows.

Chia Seeds

Chia seeds are a super food that are packed with nutrients.  Some of the health benefits of chia seeds are

  • combats diabetes
  • Helps prevent Diverticulitis / Diverticulosis
  • Strengthens teeth and bones
  • Improves heart health
  • Fights belly fat
  • Because Chia seeds are a complete protein, they provide all day energy

Collard Greens

Collard greens are an extremely healthy cruciferous vegetable.  In recent studies, collard greens outshined steamed kale, mustard greens, broccoli, Brussels sprouts, and cabbage in some of it’s health benefits – particularly in its ability to bind bile acids in the digestive tract.  Some of it’s other health benefits include

SUPER HEALTHY SMOOTHIE

Ingredients: feel free to play around with the amounts of each ingredient.

  • 2-3 large collard green leaves, rough stems removed
  • 1/2 cup blueberries (frozen or fresh)
  • 1/2 cup strawberries (frozen or fresh)
  • small chunk of ginger
  • 1 Tbsp. chia seeds
  • 3/4 unsweetened coconut milk
  • 2-3 ice cubes
