Apple Cinnamon Raisin Oatmeal Bites

My new love interests are these yummy no bake apple cinnamon raisin oatmeal bites!  Holy cow, these things are YUMMY!  They remind me of an oatmeal cookie, but SUPER good for you!  All of the ingredients have various health benefits, but let’s focus on the fresh apple in these guys!

Look at all those health benefits, and that’s just one of the great ingredients in these yummies!  It’s a really good thing that these are good for you, because believe me, you will not be able to eat just one…or two…or a whole batch. 🙂

APPLE CINNAMON RAISIN OATMEAL BITES

Ingredients

  • 2 1/4 cups gluten free old fashioned oats
  • 3/4 tsp. cinnamon
  • 1/2 cup + 1 Tbsp. almond butter
  • 1/3 cup raw honey
  • 1 tsp. alcohol free vanilla
  • pinch of sea salt
  • 1 large apple, shredded and squeezed in a dish towel to get out as much moisture as possible
  • 1/3 cup raisins

Directions

1.) In a large mixing bowl, stir together the oats and cinnamon.

2.) In a small sauce pan, combine the almond butter, honey, vanilla, and sea salt over low heat.  Stir until smoothly combined (no globs of almond butter)

3.) Add the almond butter mixture to the oat mixture, and stir to combine completely (don’t be afraid to use your hands on this to make sure it is mixed together completely).

4.) Add the apple and raisins.  Stir to combine completely.  Use your hands to create bite size balls.  Let sit in the fridge for at least 1/2 an hour to set.

TRAIL MIX ENERGY BITES

I ran in a 5K this morning, and I wanted to reward myself with something sweet!  With me not eating sugar and many other ingredients that normally go into baked goods, it’s never easy for me to find cookie/sweets recipes that I can have.  Today, I REALLY wanted something, so I went onto Pinterest, and I got creative.  The pin that I found was this one:

I had made these before, and they are fantastic exactly as the recipe is, but today, I decided to get a little more creative, and I’m so glad that I did, because the result was SO yummy!  I still had some oven dried strawberries left over from the last time that I made them, and I also remembered how good the trail mix was that I made with these strawberries, so I went from there.

I wasn’t sure what to call these, but I settled on “trail mix energy bites”.  The “trail mix” part is self-explanatory when you see the ingredients, and the “energy bites” part comes from the coconut oil, coconut milk, and coconut flour — all of these ingredients will give you a nice healthy boost of energy.  Every single ingredient in these little balls of delight is good for you, so even though you feel like you are eating a cookie, you don’t have to feel bad about putting it in your body!  I did, however, have to make sure not to eat the whole batch – yes, they are that good!

Another plus is that you can whip these up in a matter of about 15 minutes (though you do have to chill them for a while after making them)!  There is no baking involved, and they are SO easy to make!  So, without further ado, here is the recipe!

Ingredients:

  • 1/2 cup almond butter
  • 1/2 cup cashew butter
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened shredded coconut (1/4 cup in the cookies, and 1/4 cup to roll the balls)
  • 1/3 cup roasted cashews
  • 1/3 cup roasted almonds
  • 1/3 cup dried strawberries
  • 1/4 cup coconut milk
  • 1/4 cup coconut oil
  • stevia to taste (You could also use honey (about 1 Tbsp), but honey is still a sugar, so I opted for stevia

Directions:

1.) Put the cashews, almonds, and dried strawberries into a food processor and pulse till chopped.

2.) Add the rest of the ingredients to the food processor.

3.) Blend on high till the mixture starts to form a ball.

4.) Form balls with the batter, and roll each one in unsweetened shredded coconut till coated.

5.) Once you have used all the batter, place balls in an airtight container and put in the fridge for at least an hour before eating.  Store in the fridge.
