Butternut Squash Porridge

Okay, this is my new favorite breakfast (until I come across my next new favorite breakfast ūüėČ ) ¬†But for now, this is it! ¬†I LOVE that butternut squash is a vegetable! ¬†It’s SO versatile, and has so many uses. ¬†And now, I’ve got a new one for you – porridge, or hot cereal, you could really call it either or, but once you try it, you will definitely call it delicious!

Look at all those nutrients!  No wonder why I love this stuff!  Oh, and as a HUGE added bonus, when you are baking the butternut squash for this recipe, it will fill your house with some amazing smells!  Your house will smell like a bakery or doughnut shop, and your mouth will be watering!

BUTTERNUT SQUASH PORRIDGE

Ingredients – makes one serving

  • 2 cups cubed butternut squash
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • pinch of stevia
  • 1/2 tsp. alcohol free vanilla
  • 2-3 fresh strawberries chopped
  • handful of fresh blueberries
  • 1/2 – 1 cup unsweetened almond milk
  • 1-2 Tbsp. unsweetened shredded coconut
  • 1 tsp. chia seeds

Directions

1.) Preheat the oven to 350 degrees.  In a small bowl, add your butternut squash, cinnamon, nutmeg, and stevia.  Toss to coat.

2.) Line a baking sheet with parchment paper, and spread out the butternut squash on the sheet.  Bake for 50-60 minutes till the squash is tender at 350 degrees.

3.) Place in a bowl, add the vanilla, and mash with a fork.

4.) Add the almond milk, strawberries, blueberries, coconut, and chia seeds.

Healthy Creamy Broccoli Cheese Soup

Broccoli cheese soup always reminds me of when I was a kid!  My mom makes the best broccoli and cheese soup.  I was craving it the other day, so I went onto Pinterest, and I found the following recipe for it.

This looked so good, so I decided to make some adjustments and turn this into a nice healthy recipe for broccoli cheese soup. ¬†I’m so glad I did, because the result was amazing, and eating it is like eating comfort food!

CREAMY BROCCOLI CHEESE SOUP

Ingredients

  • 1.5 cups chopped red onion
  • 1 Tbsp. olive oil
  • 1-16oz. package of frozen broccoli, rinsed
  • 1.5 tsp. garlic powder
  • 1/4 tsp. dried thyme
  • sea salt, to taste
  • 3 cups chicken broth (or veggie broth)
  • 1 cup almond milk
  • 3 cups shredded cheese of your choice (I used medium cheddar)
  • 2 tsp. arrowroot powder

Directions

1.) Heat the olive oil in a large pot.  Add the onion and cook for about 5 minutes.

2.) Add the broccoli, garlic powder, thyme, sea salt, and chicken broth.  Bring to a boil, and boil for 10-15 minutes.

3.) While the broccoli is boiling, shred your cheese and sprinkle it with the arrowroot powder.  Mix to coat the cheese.  Set aside.

4.) Reduce heat to medium (a low simmer), and use a potato masher to mash the broccoli to your liking.  I left some pieces in tact, but mashed up most of it.

5.) Add the almond milk and the cheese.  Cook for 12 minutes, stirring frequently.

6.) Transfer to a bowl and season with sea salt to taste.  Top with some shredded cheese if desired.

Strawberry Banana Shake (With Two Full Servings of Veggies!)

There is no way you would ever guess that this shake has anything healthy in it, let alone two full servings of veggies! ¬†But, I can assure you, it does! ¬†This is a simple shake, but the nutrition this thing contains is anything but simple! ¬†With the three main ingredients being cauliflower, strawberries, and bananas, this should come as no surprise! ¬†Let’s take a look at some of the health benefits of these three amigos!

So there you have it, this thing is basically a cup full of health and wellness! ¬†Now, you may be thinking that cauliflower is delicious, but in a shake? ¬†Seriously though, you don’t taste it, and because it’s frozen, it actually gives the shake a nice creamy texture! ¬†Just try it! ¬†You won’t be disappointed!

STRAWBERRY BANANA CAULIFLOWER SHAKE

Ingredients

  • 2 cups frozen strawberries
  • 2 cups frozen cauliflower (bagged frozen or steamed then frozen)
  • 1/2 banana
  • 1 1/2 cups almond milk
  • 1/2 – 1 tsp. alcohol-free vanilla
  • stevia, to taste

Directions

Place the banana, cauliflower, vanilla, stevia, and 1 cup of almond milk in a blender.  Blend till smooth.  Add the strawberries and the remaining 1/2 cup almond milk.  Blend till smooth.

Pour into cups to serve.
