I was looking through pins on Pinterest, and I saw the following pin.
I was simply looking for a great salad recipe for lunch, but kept seeing really involved salads like the one shown here. Since I don’t eat a lot of the ingredients shown in this salad, I decided to just throw together a really simple version of it, and wasn’t sure if I would even end up posting on it. BUT, after tasting the salad I came up with, I knew I had to share it with you all!
This salad is REALLY simple, but it is packed full of nutrition and flavor! You will love it!
HEALTHY LUNCH SALAD
Ingredients – Makes 1 serving
- 2 cups arugula
- 1 boiled egg, chopped into small pieces
- 1/4 avocado, chopped
- 7 cherry tomatoes, chopped into small pieces
- 1/4 cup fresh basil, chopped
- 1 oz. firm goat’s milk cheese, shredded
- olive oil
- lemon juice
- sea salt
On a plate, layer the arugula, boiled egg, avocado, and tomatoes. Drizzle with olive oil, and sprinkle with lemon juice and sea salt. Top with the basil and shredded cheese.
