Cookies for breakfast?!?! YES!!! These breakfast cookies are completely healthy, and make for a wonderful breakfast! Not only that, they only require THREE ingredients!!! I saw the following pin on Pinterest.
I changed one of the ingredients. I used frozen blueberries instead of chocolate chips to make them healthier, but don’t worry! They still taste amazing! When I saw this pin, I was skeptical. I didn’t think the cookies would hold together with just these three ingredients, but low and behold, they did and they are perfect!
3-INGREDIENT BREAKFAST COOKIES
Ingredients – makes about 15 small cookies or 7 large cookies
- 2 ripe bananas
- 1 cup gluten free oats
- 1/3 cup frozen blueberries
1.) Preheat the oven to 350 degrees. In a mixing bowl, use a fork to mash the banans. Add the oats and blueberries. Mix well.
2.) Cover a baking sheet with parchment paper. Drop the cookie mixture onto the baking sheet using a spoon.
3.) Bake in the oven at 350 degrees for 15 minutes.
4.) Let cool a bit, then serve.
