Cauliflower Fried Rice with Stir Fry Vegetables

This dish is one of my favorites!  I am always thrilled when I find a recipe made entirely of vegetables that is extremely filling, and this one fits the bill!  I got the idea for this dish from the following pin.

It’s a recipe for Roasted Cauliflower Rice.  I’ve made cauliflower rice before to make a pizza crust with it (recipe here), and when I saw this post, I figured “Why not make a yummy fried rice recipe with it?”  Turned out to be a great idea, because the recipe turned out great.  It’s SO healthy as it is entirely made up of vegetables, and it is FILLING, which is great!  This is also a fairly easy recipe to make, so it makes for a really easy lunch or dinner!

CAULIFLOWER FRIED RICE WITH STIR-FRY VEGGIES

Ingredients: makes 2-3 servings

  • 1 head cauliflower, cut into florets
  • 2 Tbsp coconut oil
  • 1 red onion, cut into thin strips
  • 1/2 tsp. garlic powder
  • 1/4 cup water
  • 1 Tbsp. shredded fresh ginger
  • 2 cups broccoli florets
  • 1 large carrot, peeled and sliced into small sticks
  • 1 red bell pepper, chopped
  • 2 Tbsp. lemon juice
  • 2 Tbsp. pepitas (shelled pumpkin seeds)
  • sea salt to taste

Directions:

1.) Place the cauliflower florets into a food processor.  Pulse till the consistency resembles rice.

2.) Heat 1 Tbsp. of the coconut oil over medium heat in a large skillet.  Add 1/2 of the onions and cook till tender (about 5 minutes).  Add the cauliflower rice, garlic powder, and 1/4 cup water.  Cook till water cooks down completely, and cauliflower rice is tender.  Place cooked rice in a bowl.  Cover, and set aside.

3.) In the same skillet, heat the other Tablespoon of coconut oil over medium high heat.  Add the rest of the onions, and cook till tender, stirring constantly.

4.) Add the ginger, broccoli, carrot, and bell pepper.  Stir constantly and cook till vegetables are crisp tender.

5.) Serve veggies over the cauliflower rice.  Season with sea salt, and top with pepitas.
