This salad though! I’m pretty sure I could eat this day and night for a month and still crave more of it! It’s delicious! I got the idea for it from the following pin.
I made a few very minor changes. The recipe this links to is VERY healthy as is, but I didn’t have everything on hand, so I changed it up a tiny bit. If you’re looking for a way to incorporate more Kale into your diet, this salad is right up your alley! It tastes SO good, and is filling enough to have as a dinner. On top of that, it’s really simple – ingredient wise and preparation wise!
Even my hubby loved it, and he doesn’t like avocados. I waited until after he was done to tell him it has avocados in it, and he was really surprised because he LOVED this dish! Yay!
KALE AND BUCKWHEAT NOODLE SALAD WITH AVOCADO AND CHICKPEA DRESSING
- 1 small bunch of Kale
- 1/4 red onion
- 1 7/8 oz. package of buckwheat noodles
- 1 large ripe avocado
- 1/4 tsp. garlic powder
- 1 Tbsp. olive oil
- 1/2 cup chickpeas
- 2-3 Tbsp. lime juice
- sesame seeds
- sea salt to taste
1.) Finely chop your Kale.
2.) Prepare the buckwheat noodles according to the package directions.
3.) Use a food processor, blender, or a fork (to mash), to mix together the onion, avocado, garlic powder, olive oil, chickpeas, lime juice, and sea salt.
4.) In a bowl, mix together the Kale, avocado mixture, and buckwheat noodles. Garnish with sesame seeds and serve.
