QUINOA TURKEY VEGGIE MEATLOAF

Yesterday was a meat day for me, so I decided to make a turkey meatloaf for dinner.  This is an incredibly simple and healthy dinner!  I made it last night, and prep time takes less than 15 minutes.  I got the idea for turkey meatloaf from this pin on Pinterest

However, the recipe this picture will lead you to has a lot of ingredients that I don’t eat (brown sugar, ketchup, bread crumbs, etc), so I made up my own recipe that’s truly extremely good for you!  It is full of flavor, tastes amazing and is comfortably filling.  Filled with a great mixture of protein and healthy nutrients, this makes for a perfect recovery meal after a hard effort run or workout! Here is the recipe that I made up!

Ingredients:

-1 cup cooked quinoa
-2 eggs
-1 cup chopped spinach
-1/2 large red onion, chopped
-1 red pepper, chopped
-1/2 tsp. garlic powder
-1/2 tsp. dried thyme
-1/2 tsp. ground oregano
-1/2 tsp. basil
-1lb. ground turkey

Directions:

1.) Preheat the oven to 350 degrees. Prepare a baking sheet with aluminum foil and lightly oil with olive oil.
2.) In a large bowl, mix together the quinoa, eggs, spinach, onion, red pepper, garlic powder, thyme, oregano, and basil.

3.) Add the ground turkey and mix together well.

4.) Form a loaf with the mixture on the prepared baking sheet.

5.) Bake for 1 hour, or until cooked through. Season with salt and pepper to taste.
