This is a really simple dish to put together, but it is full of flavor and makes for a perfect healthy lunch!  I was running low on groceries, and I was thrilled when I came across this pin on Pinterest, because I had all the “food” ingredients for it.


I did, however, have to make some substitutions for the dressing.  I didn’t want to use any dijon mustard because I didn’t have any, and the only kind of vinegar I ever use on anything is apple cider vinegar because of all it’s health benefits, so I substituted this for red wine vinegar.  Also, I never use vegetable oil, so I used olive oil instead.  I didn’t have a lime to zest, but I did have some lime juice, so I improvised. I LOVE how it turned out!  Super easy to make and full of foods that are packed full of nutrients!

For the salad

  • 1/2 cup quinoa
  • 1/2 cup lentils
  • 2 green onions, chopped
  • 1-2 Tbsp. chopped cilantro

For the dressing

  • 2 Tbsp. olive oil
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. lime juice
  • pinch of sea salt
  • pinch of garlic powder


  1. Prepare the quinoa and lentils as directed on the package.
  2. Chop your green onions and cilantro.
  3. Mix together the quinoa, lentils, green onions, and cilantro
  4. In a bowl, whisk together the ingredients for the dressing, then mix the dressing in with the salad.
