STRAWBERRY SUMMER SALAD

Summer’s not over yet, guys!  This week it’s been around 95 degrees everyday here, and though I am definitely not a hot weather kinda gal, at least the hot temps let me know that summer’s still here and it’s okay to indulge in a tasty summer salad (Yay!!!  Summer salads are my favorite part of summer)!  I was perusing around Pinterest at different dishes, and I saw this pin:

As soon as I saw it, I didn’t even need to click on the link, the words spinach and strawberry let me know instantly the salad that I wanted to create!  I knew I had baby spinach and strawberries, and I knew avocado would compliment those two flavors really well.  Anytime it’s hot out, I always crave cucumbers for some reason, so I knew this would have to be a key component as well.  Pecans and goat cheese always make really good toppers for a salad, so these would have to make an appearance.  Lastly, I decided to make a really simple lemon dressing that was a bit sweet to pull it all together.  I was already salivating at this point just thinking of what I wanted to mix together!  This salad makes for a PERFECT summer salad on a hot day.  It’s filling enough to satisfy you, but it’s also healthy and light enough to keep you feeling good during  the bathing suit season.  Simple, great for you, delicious, and incredibly easy – yeah, I like that! 🙂

For the ingredients, I won’t put amounts, because really you can use as much or as little as you would like of each one.  Also, this would be fantastic with some grilled chicken, but I had meat the night before, so didn’t put any on it!

STRAWBERRY SUMMER SALAD

Ingredients:

For the salad:

  • baby spinach
  • strawberries, sliced
  • avocado, chopped
  • cucumber, chopped
  • goat cheese
  • pecans

For the dressing:

  • olive oil
  • lemon juice
  • pinch of stevia
  • pinch of sea salt
  1. Mix all the salad ingredients together
  2. In a bowl, mix all the dressing ingredients together well
  3. drizzle the dressing over the salad
