SIMPLE STRAWBERRY SMOOTHIE

As I mentioned in my recipe for Oven Dried Strawberries, I really loaded up on organic strawberries the last time I went grocery shopping, so I have yet another strawberry recipe to shaper with you!  Even after drying quite a few strawberries, I still had a lot left to play with, so on to Pinterest I went, and I came across this intriguing pin:

Strawberry soup?  Um, yes, please!  With how many health benefits that strawberries have, this sounded like it was right up my alley.  You can click on the picture to go to the original “soup” recipe.  Once I actually looked at the recipe, I realized it was EXTREMELY similar to a strawberry smoothie that I make quite often.  The only difference is that I use less strawberries, less lemon juice, alcohol free vanilla, and I use a pinch of stevia in place of the honey.  Thus, my verdict is that this is a smoothie, BUT if I did add more strawberries, it may have a soupier consistency, so I suppose it could pass as a soup.  Whatever you call it, it’s delicious, healthy, delicious, easy, and did I mention that it’s delicious?

SIMPLE STRAWBERRY SMOOTHIE

Ingredients:
-About 7 very large strawberries
-1 cup plain greek yogurt
-alcohol free vanilla (small amount – about 1/2 tsp.)
-stevia – just a pinch
-1 tsp. lemon juice

Directions:
1.) Put all ingredients in a blender and blend till smooth. If you want it to have more of a shake consistency, you could add some ice and a small amount of coconut milk.
2.) Pour into a glass and enjoy!
